In 1896, Arantxa went to join her husband in India, but after only 3 years, fevers and a suffocating climate exhausted her patience. She had to reluctantly return to her Basque Country, as she fell in love with this wonderful country.
However, she brought back a delicious chutney recipe, a fruit or vegetable jam, which is the ideal condiment to spice up meat (including hunted game in the forests along the Béarn river), cold fish, etc. She loved the one she was cooking with shallots.
